Calcareous silty clay
Pale pink color, tending to powder pink which evolves to “onion skin”with aging. The nose reveals a bouquet of flowers including wisteria and a fruity note of currant, gooseberry and wild strawberry. The character of the vine highlights a decisive note to the aftertaste that identifies its origin.
Fish, fresh cheeses, red meat tartare . Serve at 4-6°C.
